This is a great recipe for week-end batch cooking. Make it on a Sunday and you have vegetables for the week. You can add these to rice, pasta or eat as is. To save even more time you can buy the broccoli already cut into florets.

Ingredients:

2 heads of broccoli

Canola oil

salt, pepper

  1. Heat oven to 475 degrees and place baking sheet on lower level.
  2. Cut broccoli into even sized smaller florets and place into a bowl.
  3. Toss broccoli with one tablespoon of canola oil and season with salt and pepper to taste.
  4. Once baking sheet has heated, pour broccoli florets in one layer on baking sheet and place in oven.
  5. Roast broccoli for about 15-20 minutes. The longer they roast the crunchier they get.
  6. Enjoy immediately.
