Southwest Black Bean Burger Made Easy

There is no better time to add more plant-based meals to your diet than now. With rising food prices, especially meat and chicken, it’s time to embrace the Southwest Black Bean burger. It’s delicious, easy to make, and good for you. Although I always recommend making your own beans (you can control how much salt is added), you can also make this burger with canned beans.

 

Ingredients:

2 cans black beans, rinsed and drained well

2 eggs, lightly beaten

1/2 cup panko bread crumbs

1/2 cup frozen corn, defrosted

2 scallions or 1/2 onion, chopped fine

1/4 cup cilantro, chopped

1 garlic, crushed

1/2 tsp adobo sauce

1/2 tsp cumin

1/4 tsp salt

pepper to taste

Instructions:

  1. Roughly mash beans in a big bowl.
  2. Add the rest of the ingredients and mix. If the dough is too wet, add more bread crumbs.
  3. Shape into thin patties and place on a baking sheet or plate. You can either saute the patties immediately or refrigerate them until you’re ready to cook them. This helps them keep their shape, which is helpful if they don’t seem to hold together well.
  4. Enjoy on a bun with your favorite toppings or eat them on their own with a big salad.
