Ingredients:
2/3 cup maple syrup
4 tsp vanilla extract
1/2 tsp salt
1/4 cup canola oil
2 cups whole almonds, chopped coarse
2 cups unsweetened flaked coconut
1 cup quinoa flakes
1 cup oats
1 cup pepitas
dried fruit of your choice
Directions:
- Line a baking sheet with parchment paper and heat oven to 325 degrees F.
- Place maple syrup, vanilla and salt into a bowl and whisk. Add oil and whisk again.
- Add the chopped almonds, coconut, quinoa flakes, oatmeal and pepitas and stir.
- Pour mixture onto a baking sheet and spread evenly over pan. Use the back of a measuring cup or spatula to press mixture firmly onto pan. This ensures you get those big chunks.
- Bake for about 15-20 minutes then rotate pan and bake for another 15-20 minutes. Keep and eye on the oven so it does not burn.
- Take out of the oven and let cool before you break it into pieces. Finally add whatever dry fruit you enjoy.
