If you are looking for ways to include more grains into your diet, this recipe fits the bill. This energized oatmeal is made with steel-cut oats, amaranth and millet. Amaranth is an excellent source of fiber and iron and contains about 7 g protein per 1/4 cup. Millet and steel-cut oats contain about 4 g fiber and 5g protein per 1/4 cup. Together these grains form a nutritional powerhouse! What a way to start the day. To help increase iron absorption add some vitamin C rich fruits, such as strawberries, blueberries or raspberries.
Ingredients:
4 cups water with a pinch of salt
1/2 cup steel-cut oatmeal
1/2 cup millet
1/4 cup amaranth
1 cup blueberries, strawberries or raspberries (or any other fruit you like)
1/2 tsp cinnamon
date syrup (or your preferred sweetener) to taste
Serves 4
Directions:
- In a large saucepan bring water with salt to a boil. Slowly add steel-cut oats, millet and amaranth into pan and reduce heat to simmer. Stir, cover pan and cook for about 30 minutes.
- When grains are soft, add a cup of oatmilk or any other plant based milk you like. Then add the cinnamon and fruit.
- Sweeten to taste.
