Pupusas are a Salvadorian griddle cake. They are similar to quesadillas but instead of flour tortillas you use a corn dough. It’s easy to make and you can use a variety of fillings. I’m using cheese and spring onions but you can also use bean and corn, spinach and cheese, chicken and cheese. Or any other combo you enjoy.
Ingredients:
Filling:
1 1/2 cup Cheddar or Monterey Jack Cheese
2 scallions chopped small
1 chopped jalapeno, stem and seeds removed and diced (optional)
1/4 tsp salt
Pepper to taste
Dough:
2 cups masa harina
1/4 tsp salt
1 1/2 to 2 cups warm water
Directions:
1. Mix all the ingredients for the filling in a small bowl.
2. In a large bowl, add the masa harina, salt and the water and knead until soft and slightly tacky. Cover.
3. Place some parchment paper on the counter. Take about 1/4 cup dough and roll into a ball, flatten into a 4 inch circle. Fill center of circle with about 2 Tablespoon of cheese. Fold sides around filling and close top. Place on parchment paper, place another piece of parchment paper or saran wrap over dough and flatten with a plate.
Place on baking sheet and continue with the rest of the dough.
5. Heat an iron skillet over medium high heat. Add a few drops of oil and wipe with paper towel or silicon brush. Cook pupusas in skillet for about 3 minutes on each side and serve immediately.
