This healthy chili is easy to make, high in protein, and tastes delicious. You can change up the vegetables and/or beans to whatever you have in the fridge and/or cupboard. I’m using carrots and corn, but you can also use mushrooms, peas or sweet potatoes. Instead of kidney beans you can use black, pinto, or cannellini beans.
Ingredients:
1 pound turkey
1 onion, diced
3-4 garlic cloves, minced
1/2 cup sliced carrots
1- 28 oz can crushed tomatoes
1 cup frozen corn
1 bay leaf
1 tsp oregano
Directions:
1. Heat 1 tsp canola oil in a large pot on medium heat. Add onion and carrots and saute until onions are translucent.
2. Add ground turkey, garlic and spices and cook until brown.
3. Add crushed tomatoes, kidney beans, corn and one cup water or chicken broth. Simmer for 30-45 minutes.
4. Season to taste and serve.
