It’s so easy to make your own cashew cheese, that there is no need to pay for the overpriced cashew cheese found in the grocery store. Once you have made this recipe, you may want to explore other flavor combinations, such as roasted bell pepper, paprika, cilantro or lemon. For this to be a “cultured” cashew cheese I added some Probiotics. I have made cashew cheese with and without Probiotics and I have to say, when you you use Probiotics it tastes soo much better. It adds that nice tang that you get like when you eat yogurt. I didn’t chose any specific probiotic, just simply the one that was the cheapest. I know probiotics are trendy topic , so I will post an article about what the science says when it comes to probiotics.

Anyway, I hope you enjoy this recipe, it’s super easy to make but does take time to make.

Ingredients:

1 cup raw cashews

1/2 tsp salt

1/4 to 1/2 cup water ( add more if you want it to be more of a cashew cream)

1/2 capsule Probiotic

(optional lemon, nutritional yeast and/or garlic)

Directions:

  1. Cover cashews with water until submerged and let soak for 8-12 hours.
  2. Drain and rinse cashews and place in blender, add water and blend until smooth.
  3. Add salt and whatever other flavoring you want (lemon, garlic, nutritional yeast, herbs)
  4. Place in container and mix in 1/2 capsule Probiotics.
  5. Let sit on cover for about 24hrs, it’s now ready to eat. Place in fridge to store.
