Make This Easy and Healthy Mushroom Burger

This burger is not only good for your waistline but also for your wallet. With meat prices up 15%, it’s time to embrace the plant-based burger. And I don’t mean the plant-based burger with a gazillion ingredients; this one only has one ingredient, mushroom! Mushrooms inherently have a meaty texture, making them a great hamburger substitute. When you look at the calorie savings – 40 calories for a mushroom burger versus 250 calories for a hamburger, not to mention the 6 g of added saturated fat – it’s a no-brainer to switch. Add a slice of cheese for more flavor and umami; with these calorie savings, you can afford the extra indulgence.

Easy Mushroom Burger

This plant-based burger is so easy to make and it includes only a few ingredients.

Ingredients
  

  • 4 Portabella mushrooms
  • 1/4 cup Olive Oil
  • 1 Tbsp balsamic Vinegar
  • 1 clove crushed garlic
  • 1 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 red onion, sliced in 1/4 slices

Toppings

  • arugula
  • vegan mayonnaise

Instructions
 

  • Wipe mushrooms clean with a moist towel and cut shallow slits on top of the mushroom caps (be careful you don't cut all the way through). This helps the mushroom absorb the marinade.
  • Add the remaining ingredients (except the onions) to a gallon-size Ziploc bag and squish the bag to mix the ingredients. Add the mushrooms and seal the bag. Let marinade for about an hour.
  • Heat cast iron skillet to medium-high. When the pan is hot, add mushrooms. Add sliced onion to the remaining marinade and add to the pan as well. Depending on the thickness of the mushrooms, you may need to add a lid to help them cook through.
