These chocolate bars will become your new staple dessert in your home, but only if you love chocolaty nutty goodness. It does require a food processor to help grind up the cashews. They happen to be gluten-free and don’t require any baking. You need a food processor or blender to grind the nuts and dates. My family loves these as an afternoon snack, so be prepared to make them over and over and over again.
Ingredients:
1 1/2 cups raw cashews
1 1/2 cups dates
1/2 cup almond butter
a little less than 1/2 cup maple syrup
1/2 cup unsweetened shredded coconut
1/2 tsp almond or vanilla extract
1 1/2 cups semi-sweet chocolate chips
Directions:
- Place cashews in a food processor and grind them into a fine meal.
- Pit and chop the dates and add them to the food processor. Also, add almond butter, maple syrup, shredded coconut, and almond or vanilla extract and pulse until the dough forms a ball and the dates are finely chopped.
- Line a small sheet pan with parchment paper and press the mixture onto the paper with the back of a measuring cup. Refrigerate for about 4 hrs.
- After it’s cooled, combine chocolate chips in a double broiler and stir until melted. Pour over the cooled mixture and place back into the refrigerator until the chocolate has hardened.
- Cut into rectangles, place into a covered container, and keep refrigerated.
