Easy and Healthy Overnight Oats

These oats are the perfect start to a busy day.  You can make it one to two nights before you are ready to eat it. You can vary the fruit, or the nuts, add chia or hemp seeds, or ground flax seeds (for extra omega 3's). It will taste delicious and is so good for you.

Ingredients
  

  • 1/4 cup oat
  • 1 grated apple or other fruit
  • 2 Tbsp soaked almonds or walnuts*
  • 1/2 cup skimmed milk, Kefir,or non-dairy milk
  • 1/4 tsp cinnamon

Instructions
 

  • Soak almonds* overnight in water, drain and chop into pieces. You can skip the soaking if you don't have time.  But I like how soft the almonds are when soaked, and it also removes phytic acid.
  • Pour oatmeal and nondairy milk into a mason jar. Add grated apple and cinnamon, stir, and cover with a lid. Let sit in the fridge overnight. That's it!
    The next morning, you can take it with you as is, just bring a spoon.  

Notes

*Soaking nuts removes phytic acids, helps nutrient absorption, and makes them easier to digest.
